Hosteria Da Franz is a must dine experience in Venice. You will be served by a fantastic family (father, mother and son). It checks all the boxes, atmosphere, service, culture, cuisine and wine. 🍷 We were in Venice 4 nights and unfortunately only dined here one time. We are VERY picky and this place was so special and will always be remembered! ♥️

I had a wonderful experience on 4/5/26 for dinner, the atmosphere is warm, the service is genuine and attentive and most importantly the food is outstanding. Undoubtedly the best dining experience I have had in Venice. The cuisine is local but elevated and thoughtful. The classic Rissoto de Go is served two ways (traditional and with Hostaria de Franz twist). The desserts were mind blowing, specifically the Gorgonzola cheesecake.
Wow! This was by far the best restaurant we ate at in Venice. True fine dining. Creative, excellent food and top service. We appreciated they were open on Sunday. We also appreciated the option to select “English” along the top bar of their website. The restaurant was started by the owner's father 40 years ago. On our evening, the owner, Mauricio, was our waiter, his wife was busing tables and helping serve, and his adult son was the (trained) sommelier and helping serve. The setting was intimate and lovely - a small dining room of 10-12 tables. The front door is exactly where it shows on Google maps - look down an alley nearby, and you will see the entrance. We were greeted and asked if we would like to have our coats hung up. We sat down and ordered glasses of wine. We both really liked the wines our sommelier suggested (my husband red, me white.) We asked Mauricio a lot of questions about the menu, which he answered enthusiastically. It was extremely helpful, and I would recommend asking, as his descriptions were vivid, clear, and helped us order to suit our tastes. My husband and I each chose an appetizer, a main, and a dessert (6 items total), and we shared all of them between us, so we could both try multiple things. We arrived hungry, and this was the right amount of food for us. To start the meal, each person received a small chef's appetizer (not ordered, it just arrives, but they confirmed no fish allergy). Crispy fish meatball with a lime mayonnaise sauce - my favorite dish overall! Crispy outside and creamy inside. Each table then got tall crispy breadsticks. Then came the appetizers we ordered. First was an appetizer of five types of raw fish, each about 2 bites and each prepared differently. The son explained each item on the plate as he delivered it, from mildest to strongest, and we ate them in that order. My favorite was the fourth, which had a drop of a lemony sauce that gave it a lovely brightness. Next, our table received baked bread. Then the mains - fish of the day (local sea bass) and Asado beef. The fish was a simple flavor profile with excellent texture, with grilled asparagus. The beef had the texture of a slow-cooked pot roast on the inside with a flavorful marinade and the crispy sear of a steak on the outside, served with a grilled carrot. We both absolutely loved this beef. We would love to return and try other menu items, too! The desserts were creatively displayed. The first one was "El Vovo." It had a crispy white chocolate shell that cracked like an egg, a white chocolate mousse inside, and then inside that was a part that looked like an "egg yolk" that was actually a passionfruit sauce. It was on top of a crispy "nest." Perfect combination of textures together and fun to crack open! The second dessert was the caffelatti e biscotti, which was my husband's favorite - coffee sorbet with pieces of cookie biscuit in the bottom (soft) and a whole cookie biscuit (crunchy) sticking out, topped with foam, which made it look like a "coffee drink” from the outside. We loved the "surprise" of each one. Finally, each table received a small chef's dessert, which was like a bite of chewy rum cake - not my favorite, but my husband loved it. My husband also ordered a coffee and said it was good. The service was very attentive - great suggestions, friendly, answered our questions. The pace of the meal was just right - we did not feel rushed, but we also did not have to wait too long between courses (overall ~2 hours). They took great care to create a special atmosphere (even beautiful dishware!) and pride in the food and experience. We noticed that one two-top table remained open on a Sunday evening. I would highly recommend a reservation due to the small dining room, but it may be possible that one table is available without, so you could always ask. The bathrooms were nicely appointed and clean. We would strongly recommend this restaurant. Superior in freshness, locally sourced ingredients, creativity, flavor, presentation, and service.
We did not have reservations here, but we got there when it opened and they were able to squeeze us in. The attention to details by this family-run establishment, starting with the service, followed by each perfectly prepared dish, made the entire dinner a wonderful experience from start to finish. It is not a typical Italian menu, but a small selection of dishes, focusing on local seafood prepared in an innovative way. We began with sardines and cod appetizer, full of flavor, both pickled and sweet. We shared the risotto made with a local fish called “gò”. The dish was presented and explained how best to eat it in order to experience the flavors the way the chef intended. It was outstanding. Our main courses were also fantastic, fresh seafood dishes also expertly prepared. The desserts were visually stunning. We had the white chocolate “egg” with passion fruit center, along with the Gorgonzola cheesecake. The creativity and presentation of these two desserts, combined with the flavors were out of this world. Da Franz was excellent! Definitely make a reservation here if you like to try new, wonderful dishes, where they clearly pay attention to every detail to ensure you have a perfect dinner experience.
